Flourless Golden Veggie Croquettes
Introduction
Flourless Vegetable Croquettes are the ultimate guilt-free, low-carb comfort food. Made by combining finely shredded low-starch vegetables like cabbage, zucchini, and carrots with eggs and cheese, these patties are pan-seared until golden brown on the outside and tender on the inside. They deliver the satisfying feel of traditional potato or flour croquettes without the heavy carbs.
History & Formation
Origins of the Croquette: Traditional croquettes originated in France (croquer, meaning “to crunch”) as a way to combine leftover meats or mashed potatoes bound with breadcrumbs and fried.
The Low-Carb Evolution: As keto, low-carb, and gluten-free diets surged in popularity, home cooks began replacing starchy bases with high-fiber, water-rich vegetables like cabbage, zucchini, and cauliflower. Using eggs and grated cheese as a binder completely eliminates the need for flour or breadcrumbs while creating a crispy crust.
Ingredients
The Vegetable Base
2 cups shredded cabbage (green or shredded fine)
1 medium zucchini, finely shredded
1 medium carrot, finely shredded
½ cup finely diced green onions or chives
The Binder & Seasoning
2 large eggs
½ cup shredded mozzarella or parmesan cheese (helps bind without flour)
½ tsp garlic powder
½ tsp onion powder
Salt and fresh black pepper, to taste
1–2 tbsp olive oil or avocado oil (for pan-searing)
Step-by-Step Instructions
1. Extract Moisture (Crucial Step): Shred the zucchini and cabbage. Place them in a clean kitchen towel or cheesecloth, sprinkle with a pinch of salt, and let sit for 5 minutes. Squeeze tightly over the sink to remove as much liquid as possible. (Excess water prevents croquettes from holding their shape).
2. Combine Ingredients: In a large bowl, mix the squeezed cabbage and zucchini with the shredded carrot, diced green onions, eggs, shredded cheese, garlic powder, onion powder, salt, and pepper. Stir until everything is well coated and holds together when pressed.
3. Shape the Croquettes: Divide the mixture and roll/shape into uniform oval croquettes or small cylinders using your hands.
4. Pan-Sear: Heat olive oil in a non-stick skillet over medium-low heat. Place the croquettes in the pan without overcrowding.
5. Cook to Golden: Cook for 4 to 5 minutes per side, gently flipping with a spatula, until all sides are deep golden brown and the egg/cheese center is set through.
6. Serve: Drain briefly on paper towels and serve warm with a garlic-yogurt dip or spicy mayo.
